All three varieties were harvested separately at optimal ripeness. Fermentation took place for 10 days with regular punch downs and pump overs to ensure good colour and flavour extraction from the skins. Malolactic fermentation took place in steel tanks and then all three varieties went to specifically selected French, Hungarian and American Oak barrels to mature for 18 months. 40% of the blend was matured in 1st fill barrels, 30% in 2nd fill and 30% 3rd fill. All the components were blended prior to bottling. Only 10 000 bottles were made of this very special blend. Unirrigated Bush vine Pinotage was used from the Paarl and Swartland region together with Merlot and Cabernet Sauvignon from Stellenbosch. Pinotage 60% | Cabernet Sauvignon 20% | Merlot – 20%
